Cavalier Bleu
Blueberry I.P.A. • 6.0 % • Wild OatsBuilt on the foundation of a generously hopped I.P.A., Cavalier Bleu blends the citrusy aromas of organic New Zealand hop varieties with the fruity flavours found in American Azacca and German Mandarina Bavaria hops. Topping it off is an infusion of organic blueberry juice made from wild Québec blueberries.
History and Style
A boat-load of extra hops (a natural preservative) made India Pale Ales (I.P.A.s) historically better suited for long voyages when shipping to British soldiers stationed afar, including India. Their distinct taste caught on, and these ales became widely known and enjoyed for their aggressively hopped aromas and flavours. Berry flavours are becoming more common in newer hop varieties which made blueberries a great choice for this hop-forward style – and also we liked the colour they add to the beer.
Tasting Notes
Cavalier Bleu pours hazy light brown with blue/purple undertones and a white foam. The aroma offers a complex array of tropical fruit, citrus and blueberry notes. The flavour offers intense tangy blueberry. The finish is dry and tart.
Food pairings
Venison steak with a blueberry reduction, blueberry cheesecake, beemster cheese.
