Slow Cooker Lug-Tread Chicken Curry Chili

Yield: 6 Portions
1 ½ lb. boneless, skinless chicken. Cut into 1” cubes
1 cup onion, diced
6 garlic cloves, minced
3 cups mixed. seasonal vegetables. Cut 1” cubes.
¾ cup Lug Tread
2 16 oz. cans of white beans, drained and rinsed
1 16 oz. can diced tomatoes, un-drained
1 Tbsp. of each: chili powder, curry powder, chili flakes*
1 tsp. each ground cumin, smoked paprika, kosher salt
½ tsp ground black pepper
*optional, for a spicy kick.
- Using a 6-quart slow cooker, place the cut chicken into the insert.
- Add the vegetables and garlic. Layer on the beans, tomatoes, and the spices.
- Stir in the Lug-Tread.
- Cover, and cook on low for 8 hours.
- Mash lightly and stir before serving.
Enjoy alongside tortilla chips or warm bread.
