Channel OchoWild Oats No. 41
Mexican Spiced Ale • 8.9% alc/vol
Inspired by a recipe for Mexican hot chocolate, Channel Ocho is born of brewer Brian’s nostalgia for Mexican cooking. It is strong and dark, with Abbey Ale yeast imparting natural peppery, spicy character. Organic chipotle peppers, cinnamon sticks, and cloves add heat and complexity to this unfiltered ale. Aromas are earthy, with cocoa, spicy cinnamon, smoky chipotle and sweet chilies. Hints of stone fruits and banana esters in the background. Flavour is simultaneously earthy and spicy, with raisin and fig notes. Finish is warming courtesy of the higher ABV and spice complement.
AshnanWild Oats No. 40
Wheat Wine (Aged in Chardonnay Barrels) • 9.8% alc/vol
A wheat wine, Ashnan displays great depth of character and complexity. It features bold tannic notes that integrate very well with the tropical fruit flavours. Aging in white wine barrels contributes wood and wine character to the noticeable alcohol presence, and enhances a dry finish. A beer with a wine-imposed identity crisis, Ashnan sits comfortably between, offering the best qualities of both. Ashnan wheat wine pours a light gold colour, and is moderately hopped. This lively, effervescent golden ale abounds in tropical fruit flavours, notably pineapple. The wine-like character is pronounced, with buttery chardonnay aromas giving way to oakiness. The finish is gently warming.
GilgameshWild Oats No. 37
Old Ale (Aged in Rum Barrels)• 8.9% alc/vol
Gilgamesh old ale has been aged in rum barrels while resting on its yeast in storage, which contributes to a full-bodied and malty character. Complex fruit esters reminiscent of figs and dates add to the richness and sweetness of this dark, strong wine-like ale. Sweet rich malt and dried fruit aromas are abundant and are reflected in the flavour. Date and fig-like notes merge with some baking-spice notes of cinnamon and nutmeg, and just a touch of earthiness. Wood-aged characters including vanilla are subtle but present, as is a dark rum undertone. Gilgamesh displays well-integrated alcohol warmth.
SargonWild Oats No. 39
Ginger Beer (Aged in Rum Barrels) • 6.0% alc/vol
Sargon is a ginger beer that has been partially barrel aged in rum barrels. This fun and flavourful twist on an English Ale is our brewers’ interpretation of the classic rum-and-ginger beer combo called a “Dark & Stormy.” Organic ginger contributes the signature aromatics of this spice, along with a snappy heat. An aging in cognac/rum barrels adds the final touches to Sargon. Pours deep orange to copper in colour, with a dry finish. Ginger is dominant in this sessionable ale that offers fresh root aroma and snappy, peppery taste. Sweet malt provides a balanced counterpoint. The finish is clean and slightly bracing with gently lingering rum notes.
White Pepper SaisonWild Oats No. 38
White Pepper Saison (Aged in Red Ice Wine Barrels) • 10.2% alc/vol
This extra-strong saison beer has been spiced with white peppercorns and aged in red-grape icewine barrels. The pepper character is definitely present but doesn’t overwhelm this delicate creation; earthy undertones come out in the finish. The beer starts with bright white pepper aroma. The flavour profile is fruity, spicy and mildly peppery. The very dry finish exhibits some earthiness. The complexity is delicately enhanced with an aging in red-grape ice wine barrels.
Beaver•RiverI.P.Eh. • 5.6% alc/vol
Inspired by the Beaver River (Rivière Castor), which connects Ottawa to many communities to the east, this IPA is designed to appeal to hop heads. Taking the malt and yeast profile of a traditional British-Style India Pale Ale and adding an American-Style citrus punch, our beaver•river is both assertive and drinkable. beaver•river is organic, unfiltered and has been dry-hopped in our conditioning tanks to amplify the hop aroma.
Eastern Ontario Gruit • 6.6% alc/vol
The inspiration for bog•water came from the Alfred Bog, a truly unique feature of Eastern Ontario. The malt and yeast profile is that of a Belgian Dubbel, a very contemplative and complex ale, and we added an interesting twist: we use wild harvested bog myrtle, an herb used in brewing extensively until the 1500s. Bog myrtle adds bitterness, a sweet aroma and herbal spicy notes. The result is a beer style we can claim is truly our own, an Eastern Ontario Gruit.

Doc's Feet DubbelPro Am No. 4
Belgian Dubbel • 7.6% alc/vol
Doc’s Feet is our take on the Belgian Dubbel, a centuries old style invented by Trappist brewers. This complex, mahogany-hued strong ale has a pronounced fruitiness and malt character, alongside spicy notes and alcohol warmth. Beau’s Pro-Am Series is a salute to homebrewers, true innovators of our craft — beers designed by amateur brewers, brewed at Beau’s. Tim Gregory won the 2011 Toronto Beer Week Homebrew Contest with the recipe for Doc’s Feet Dubbel.
Ellsmere's RegretWild Oats No. 34
Marshmallows + chocolate: a vexing combination to have stuck to your hands ‘round a summer campfire, but the s’more-like flavours pair perfectly in this chocolate milk stout. The base style benefits from the addition of 18 kg of organic chocolate, 10 kg of cocoa nibs, and 20 kg of hemp seeds to achieve chocolatey goodness, restrained nuttiness and a silky mouthfeel. The flavours meld to create an exquisite dessert-like decadence with a whisper of vanilla.
Smokin' Banana PeelsWild Oats No. 11
Rauch Weissbier • 4.9% alc/vol
Smokin’ Banana Peels, see how it feels. Smokin’ Banana Peels features an intense banana aroma, a classic characteristic of a Weissbier, that has been matched with a bacon-like smokiness of a Rauchbier. It’s so mellow (Ya, Ya, Ya). Pouring a shade of mellow yellow, Smokin’ Banana Peels’ flavour mirrors its aroma with a prevalent smoke character from the smoked barley malt that is balanced against notes of banana and clove. The finish is dry, tangy, and zesty. Smokin’ Banana Peels is best in between meals of banana pancakes and bacon.
