We added both tart and sweet varieties of organic cherries to a blend of Gravity Well, Halcyon’s award-winning organic sour ale, back in 2018. The result of our years of patience is Gravity Well: Cherry. Gravity Well is Halcyon’s take on a Flanders Red ale, a style of sour beer traditionally brewed in Belgium. The tandem of the acidity playing off the subtle caramel malty sweetness keeps each in check.
History & Style
To create Gravity Well, Halcyon ferments its red ale in oak red wine barrels with a mix of different yeasts and bacteria, and aged it in those barrels for various lengths of time. As the barrels each takes on different flavours, the brewmaster custom-blends each batch of Gravity Well from this in-house supply.
Gravity Well Cherry pours a deep red with slight foam. The aroma is cherry-forward with notes of wine, and a malty sweet tang. The flavour conjures memories of cherry pie, with profound acidity, tempered by a subtle sweet malt character. A remarkably light body challenges the perception of mild sweetness. The finish is pleasingly warming and dry, with lingering acidity and cherry.
