Hibernal Solstice celebrates seasonal transition with purposeful blurred lines: our fall Märzen, aged since November 2013 in bourbon barrels, is blended judiciously with a blast of winter: the 2013 vintage of our spiced gruit, which has aged since last winter in red ice wine barrels. This deep copper beer presents itself with aromas of cherry, oak herbs and Christmas spice that give way to flavours that evoke stone fruit esters, woody tannin, light vanilla and mint, coupled with alcohol warmth andappreciable red wine character. Undertones allude to restrained bourbon and caramel. The finish is dry, tart and lightly herbal, lingering with gentle heat.
