Beau’s world-class wheat beer “Wag the Wolf” stands out from the pack

Beau’s Brewery is bringing back a world-class beer for a limited engagement this summer, its hopfenweisse Wag the Wolf. First released in 2013, Wag the Wolf has been ranked among the top 25 wheat ales in the world on beer rating site RateBeer.com. It was also given a 94 and “outstanding” distinction in a review for Beer Advocate by its co-founder, Jason Alström. Alström notes that the beer from Ontario-based organic craft brewery Beau’s is “super smooth” with “exceptional looking lacing” and “perfect golden clarity.”

Wag the Wolf is fermented with a traditional hefeweizen yeast, and hopped with organic New Zealand hop varieties to provide abundant, juicy aromas of citrus and tropical fruit. Made with a blend of wheat and barley malts, it is generously late-addition-hopped – a brewing technique of adding hops at the end of the boil to benefit mainly from their aroma, with less overall bitterness resulting in the beer’s taste. Pale gold and hazy, there are notes of banana, clove, papaya, mango and citrus on the nose. The carbonation is lively and the beer is spicy and fruity, with restrained bitterness and a slightly dry finish.

Beau’s resident Chef Bruce Wood has created two pairing recipes for craft beer + food lovers to prepare and serve at home, alongside a glass of Wag the Wolf: a Poached Peach and Homemade Ricotta Flan, and a Tomato, Saffron and Seafood Curry. Both recipes incorporate the beer into their ingredients as well. They are available at beaus.ca/recipes.

Wag the Wolf is part of the Wild Oats Series from Beau’s: beers designed to explore bold flavours and exciting aromas, and to challenge the palate of the drinker. It is packaged in Beau’s signature 600 ml bottles, and will be available for a two-month summer feature in Ontario and Québec.
